Our interpretation of farmhouse ales, traditionally brewed during winter by farmers to quench their thirst on summer's gruelling days of field work.
The beer matures for 5-6 months in oak barrels. During this long maturation, a slow mixed fermentation by indigenous yeasts brings freshness, dryness and a low acidity.

Bottle conditioned, unfiltered and unpasteurized.

HOPPY FARMHOUSE ALE WITH GRAPES

Istà Special Edition

BREWING

This beer is a blend of two different farmhouse ales, one matured in stainless steel and the other in oak barrels with our indigenous yeasts. The blend is enriched with our Tai Rosso grapes and a gentle dry hopping.

Bottle conditioned, unfiltered and unpasteurized.

WILD SOUR ALE WITH GRAPES

Incrocio Rosso

BREWING

This beer ferments and matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation, we add directly in barrels our Tai Rosso, Pinot Nero and Turchetta grapes we grow on Berici Hills. The maturation together with grapes continues for further 3 months.

BOTTLING

Bottle conditioned, unfiltered and unpasteurized.

WILD SOUR ALE WITH GRAPES

Incrocio Bianco

BREWING

This beer ferments and matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation, we add directly in barrels our Garganega, Tai Bianco and Incrocio Manzoni grapes we grow on Berici Hills. The maturation together with grapes continues for further 3 months.

BOTTLING

Bottle conditioned, unfiltered and unpasteurized.

WILD BERLINER WEISSE WITH GRAPES

Our interpretation of berliner weisse. Far from the modern berliner weisse, this beer ferments and matures for 5 months in oak barrels with our indigenous yeasts. At the end of maturation, we add directly in barrels our Tai Rosso grapes we grow on Berici Hills.

WILD SOUR ALE WITH GRAPES

Bucce

BREWING

Beer that celebrates the union between the brewing world and the craft winemaking. After a maturation of 12 months in oak barrels with our indigenous yeasts, we add our best white grapes we grow on Berici Hills together with other white grapes from our friends and colleague winemakers. The maceration of grape's skins proceeds for further 5 months.

This beer ferments and matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation, we bottle it without any adjunct of grapes or other ingredients. It's the beer that our territory gives us.

This beer matures for 12 months in oak barrels. During this period, a slow and wild fermentation by indigenous yeasts occurs. At the end of maturation, we add directly in barrels the Garganega grapes we grow on Berici Hills, some of which dried on the vine for 15 days. The maturation together with grapes continues for further 3 months.

WILD SOUR ALE WITH BLACKBERRIES AND GRAPES

Berry Hills

BREWING

This beer ferments and matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation, we add fresh blackberries we grow on Berici Hills and our Tai Rosso grapes.

WILD SOUR ALE WITH APPLES AND ELDERFLOWERS

This beer ferments and matures for 12 months in oak barrels with our indigenous yeasts. At the end of maturation, we add fresh elderflowers and ancient apple varieties from our territory.

HOPPY WILD SOUR ALE

Hop&Stave

BREWING

This beer combines the modern hopping techniques with mixed fermentation and barrel aging.
The result is a blend of different beers, aged in our barrels up to 12 months, in which both fruity hops aroma and funky character emerge.

Secondo Noi

BREWING

Beer brewed in respect of the ancient Belgian traditions.
The hot wort, exposed overnight to the cold winter air in a large open vessel, meets the indigenous yeasts from our hills. Spontaneous fermentation in oak barrels for 24 months.

BOTTLING

Unfiltered and unpasteurised. Naturally bottle conditioned.

Rive Rosse

BREWING

The hot wort, exposed overnight to the cold winter air in a large open vessel, meets the indigenous yeasts from our hills. Spontaneous fermentation in oak barrels for 24 months.
Then we add to the beer a selection of our best Tai Rosso grapes we grow on Berici Hills.

BOTTLING

Unfiltered and unpasteurised. Naturally bottle conditioned.
